Quick Fried Fish Tacos


Cinco DE mayo recipes

Using prepared fish sticks or filets
Ingredients :
-Frozen fish sticks or frozen fried fish filets
-Green tomatillo salsa
-3 cups cabbage sliced into ribbons
-1 cup carrots julliene cut
-1 handful cilantro
-1 tbs chipotle pepper in adobo
-1.5 cups mayo
-Zest and juice of 1 lime
-Fresh tortillas
-Tartar sauce


Method :


1.
Cook fish in oven as directed
2.
As fish cooks, blend mayo, Chipotle, lime zest and juice, and cilantro. *adjust amounts to your taste
3.
Toss cabbage and carrots in mayo sauce, set aside
4.
Spread a little tartar on tortillas
5.
Top with fish sliced into bite size pieces
6.
Top with chipotle lime slaw
7.
Drizzle with salsa Verde and garnish with fresh cilantro

Ingredients :
-1 Pound Ground Beef or Turkey
-Romaine Hearts - Lettuce
-Beans
-Cheese
-Tomatoes
-1 packet Taco Seasoning per Pound of meat
-Any Other Toppings of Preference


Method :
1.
Brown up meat, drain excess fat. Mix in taco seasoning.
2.
Warm up choice of beans.
3.

Ingredients :
-1 cup shredded, roasted (cooked) skinless, boneless chicken breasts
-2 tbsp low-fat or fat-free sour cream
-1/4 cup chopped fresh cilantro
-1/4 cup bottled chipotle salsa
-4 (6-inch) 100% whole-wheat flour tortillas
-1/2 cup chopped tomato
-1/4 cup (1 oz.) shredded cheddar cheese
-1/4 cup diced peeled avocado


Method :
1.
Combine first 3 ingredients in a medium bowl, tossing well to combine.

Spoon about 1/3 cup chicken mixture onto each tortilla.

Goat Cheese Taco Topper

Ingredients :
-4 oz honey goat cheese crumbles
-4 slices bacon; small dice
-2 shallots; minced
-1 lime
-1/2 avocado; diced
-1 pinch kosher salt and black pepper


Method :
1.
Slowly render fat from bacon in a small saute pan. When bacon is crispy, remove with a slotted spoon and set aside.
2.
Add shallots to hot bacon fat. Caramelize very slowly on low heat. Add a small pinch of salt. When shallots are caramelized, place in refrigerator to cool.
